Retarder Prover

Irtech manufacture a range of retarder/provers with options to allow a unit to be designed and built to suit your specific needs.
The 60mm insulated panels are internally stainless steel. Air is circulated by four heavy duty fans at ceiling level, ducted through wide panels, through the heaters / evaporators, across the cabinet and down to floor level. Humidity is created by an electronic generator.
Control is by an electronic panel with seven programmable cycles to suit different products. Each cycle can include any of five stages: Rapid stop of fermentation, Holding, Recovery, Proving, Bake delay.
Three manual operations allow the cabinet to be operated as a freezer, a prover, or a retarder.
